This is my breakfast every day of the week and I won’t leave home without having enjoyed a Masala Omelet and a pot of Masala Chai! Breakfast is my favorite meal very possibly because I get to enjoy a delicious omelet. I’m not exaggerating when I tell you that I’m excited to go to bed at night because it means I’m going to wake up and enjoy a Masala Omelet.
Since it’s a daily ritual for me I always have diced red onions i the fridge to save time.
Ingredients
2 Eggs
1 tbsp diced Red Onions
1-2 Green Chillies Chopped (optional but recommended)
1 tsp Chopped Cilantro
1/4 tsp Salt (adjust to taste)
1/4 tsp Turmeric
1/4 Tsp Kashmiri Red Chili Powder
Preparation
Break 2 eggs into a bowl and add all the ingredients and spices. Using a fork beat the eggs just enough so that all the ingredients and spices are mixed in well.
Cooking
Heat the pan on medium-high heat and when you can feel the heat coming through the pan spray the pan with cooking spray and immediately empty the beaten eggs into the hot pan.
You’ll hear the omelet sizzling as it touches the pan and starts cooking. Using a spatula lift up a side of the omelet and let the uncooked eggs from top to run onto the pan (and sizzle!). Do this a few times and roll the liquid around the pan until most of the liquid from the top is cooked.
When there is not much liquid left on top, fold the omelet, turn off the heat and let it stand for a minute to finish cooking.
