Recipe Notes
Green chutney is made with a combination of mint and/or cilantro. You can mix and match the proportions based on your preference. I usually make it with only cilantro and sometimes add a bit of mint (if I have some in the fridge) to add the mint flavor. When making the chutney the proportions for the other ingredients are the same regardless of whether you use only mint or cilantro or a combination.
This recipe calls for a total of 3 cups which is about 1 bunch.
Ingredients
2 cups cilantro (1 large bunch)
1 cup mint leaves (1 small bunch)
2 tbsp lemon juice
1/2 tsp salt
1 tbsp sugar
1/2 inch piece of ginger
4 garlic cloves
Preparation
Combine all of the ingredients, except the lemon juice, in a blender. You will likely need to add some water for the blender to do its thing, add just as much as is needed (around 1/4 cup for this recipe).
Blend to a smooth paste and empty out the chutney into a storage jar.
Add the lemon juice to the bowl and mix well.
