Curried Turnips knowns as Shalgam ki sabzi, is another healthy and delicious vegetable recipe. If you use a different quantity of turnips you should adjust the quantities of the other ingredients as well.
Ingredients
1 lb Turnips
1 tbsp Olive Oil
1 cup Diced Onions
1 tsp Finely Chopped Ginger
1-2 Green Chillies (optional, adjust to taste)
1 tbsp Coriander Powder
1/4 tsp Turmeric
1/2 tsp Salt (adjust to taste)
1/2 tsp Sugar (adjust to taste)
Preparation
Peel the turnips and cut them up into small cubes; alternatively grate the peeled turnips. I prefer to grate the turnips since they cook faster.
Cooking
Heat oil in a non-stick pan on medium heat and add the onions, ginger and green chillies. Cook the onions until they turn translucent (about 5 minutes).
Add the turnips, coriander powder, turmeric and salt and mix into the onions base.
Cook for about 20 minutes until the water dries up stirring every few minutes. Cubed turnips may take an additional 5 minutes to finish cooking. You know they’re done when you can easily mash them with a spatula.
Turn off the heat, add the sugar and mix it in.
Curried Turnips are ready.
