“Raita” is an Indian yogurt accompaniment with raw chopped vegetables or cucumber and spices. Roasted cumin powder pairs very well with yogurt and is an essential spice to make a yogurt “Raita.”
Ingredients
1 cup Regular Yogurt
1 tsp Roasted Cumin Powder
1/2 tsp Kashmiri Red Chili Powder (you can replace with Cayenne Pepper if you want to make it spicy)
1/2 tsp Salt
1 Cucumber, medium sized
Servings: 2-3
Preparation
Peel the cucumber and cut it up to separate the seeds from the fleshy part and finely grate the fleshy part.
In a bowl whisk the yogurt until it is smooth and add the grated cucumber, spices and salt and whisk them in.
Serve the yogurt garnished with a sprinkling of roasted cumin powder and cilantro or mint.
